1080p, 720p, 360p, 240p...etc how do you read them?720 seven twenty?360 three sixty?And is it correct that this kind of stuff is called “video quality”? Are there other words? Is it right to ask “What’s the quality of the video? 720? or more?”

You're correct. Video resolution can be read as, "ten eighty", "seven twenty", etcetera. You can also add a "P" to the end when you are reading them.
